Fall is such a spectacular time! The weather cools down (for some of us) and the kitchen heats up. The smell of pumpkin spice fills not only the air but our timelines as well. I, for one, can't say that I look forward to pumpkin spice beverages and pastries. It isn't like I can't stand it but it's definitely not my favorite. I grew up eating Cheese Cakes and Cream Cheese Pies around the holidays. In fact, my mother never made pumpkin pies. She would make Sweet Potato Pies and it would bother the all living fuck out of me! Sorry mom, but I couldn't stand them.
If you're anything like me then you would say that apple er' thang is where it's at during the Holidays. I'm talking Apple Cider, Sparkling Apple Juice and Apple mother-loving Pie! I love Apple Pie so much that I could have a slice a day, or maybe every other day with Vanilla Ice Cream.
This Recipe is a fun spin on a Classic Apple Pie, minus the dough. It takes less time to make than your traditional pie. It's also perfect for a last minute dessert that can be served for one or for a larger group. This recipe in particular makes two servings. Give it a try and let me know what you think!
Ingredients:
3 Medium apples of you choice ( I used Organic Gala Apples)
2 Tablespoons of Organic Salted Butter
2 Tablespoons of Powdered Sugar
3 Full Graham Crackers
3 Tablespoons of Apple Juice or Water
1/4 Teaspoon of Organic Ground Cinnamon
1/8 Teaspoon of Organic Madagascar Vanilla Extract
Directions:
Peel and slice your apples then place them into a small baking dish. I used a round 9X9 baking pan greased lightly. In a large zip lock bag, crush the graham crackers. Make some of the pieces fine and others somewhat small. Next, in a small bowl slightly melt your butter in the microwave. Combine the butter with the powdered sugar, cinnamon, vanilla extract and crushed crackers.
Pour the apple juice or water on top of your sliced apples to prevent them from drying out. Then sprinkle your graham cracker crumble on top of the apples. Bake uncovered in the oven for 25-30 minutes or until the apples are tender.
Serve with vanilla ice cream and/or whipped cream, enjoy!
